meet chef susan

I’m Susan. I spent over twenty years working in forestry and running kitchens from New York to Costa Rica before planting roots on the North Shore. I don't do boring food, and I don't do shortcuts. At The Country Eatery, we cook with grit, soul, and total respect for the ingredients.

Before I ever stepped into a professional kitchen on Vancouver Island or trained at the Living Light Culinary Institute, I spent over two decades working in forestry and reforestation. That background taught me grit, respect for the land, and what it actually means to build something sustainable from the ground up.

My culinary path has taken me from personal chef gigs in New York to running a jungle bar and restaurant in Costa Rica, and finally home to the North Shore of Oahu. The Country Eatery isn't just a café and catering outfit—it’s the culmination of everything I've learned about hard work, wild places, and incredible food. We aren't here to follow trends. We're here to serve unapologetically fresh, farm-to-table food that hits hard and keeps our community fueled.
